Coming home to Sicily, page 98

Wild fennel arrived last night with the weekly delivery from the Farm Cadet Roussel. A very pleasant surprise for the one in the family that has Sicilian blood in her veins.

I immediately thought about trying these wild fennel fritters as seen at page 98 of Coming home to Sicily by Fabrizia Lanza. So, after contemplating it and smelling it again and again, I cooked the wild fennel in boiling water for 15 minutes. Then, I drained it, let it cool and chopped it. I added one egg, some parmesan cheese (2-3 tablespoons), salt, pepper. Finally I deep-fried spoonfuls of the batter in hot extravirgin olive oil. The result is above.
